The shade is 13.19 inches (335 mm) across. Maximum drop is 66.93 inches (1700 mm) from the ceiling, and it's adjustable, so you shorten it during install. That's a long drop for a single pendant, which is what lets you hang it low over a counter or high in a stairwell.
How many do I need over a kitchen island?
For a standard 6 to 8 foot island, three spaced 24 to 30 inches apart. For something shorter, two. Over a breakfast nook or a bedside, one is plenty. Keep the outer pendants about 12 to 15 inches in from the ends of the island so the run looks centred.
Should I get singles or the 2-Light or 3-Light bar?
It comes down to your ceiling boxes. The 2-Light and 3-Light run every shade off one canopy, so they need a single box and they hang as one fixture. Singles need a box each, but you choose the spacing and you can stagger the heights. If you already have one box in the ceiling, take the bar. If you're wiring from scratch or you want an uneven arrangement, take singles.
Which colour should I choose?

Over a kitchen island or counter, 30 to 36 inches from the surface to the bottom of the shade. Over a dining table, 28 to 34 inches from the tabletop. Lower feels more intimate, higher spreads the light more broadly. The cord adjusts so you set the exact drop during install.
Is it dimmable?

If I hang two or three, does each need its own ceiling box?
